Quick, healthy no-cook dinner!

On Take Shape for Life, we refer to the lean & green which is the main meal you eat and prepare. I am always playing with quick, healthy, lean & greens that can be pulled together in 3-5 mins. This recipe uses organic ingredients and is meatless, but is filling and satisfying.

Mexican Salad

3 cups romaine (organic and chopped for speed)

Pico Gallo without added sugar

Either veggie shreds cheddar or this new veggie cheese I found: Daiya (dairy,lactose, casein, gluten, cholesterol and soy free–and it’s still good!) – 1/2 cup  (Note: on the Daiya, there are no preservatives so eat within 7 days)

Smart Ground: Mexican Style by Lightlife (1 cup) – I just microwave for 3 mins.

Add salsa, toss, enjoy! With all that time you saved, get outside and go for a walk.
